Tomatoes are really good for us – slice them and you’ve got an instant salad, a few chops and you’ve got a bowl of juicy salsa that moistens your protein. Remember that the more color the healthier the vegetable!

Tonight is simply sliced summer heirloom tomatoes, paper thin sweet white onion, lots of scallions, broken up chunks of fresh mozzarella (the kind in the container of water) – then season with a big pinch of sea salt, a few grinds of black pepper, a drizzle of olive oil and a sprinkle of red wine vinegar. Easy peasy and super delish!

Serve with a platter of grilled chicken thighs or Italian sausages and you’ve got a great meal for the whole family!
