Cobb Salad for Bariatric Summer Meals

The Cobb is a classic and this version takes a little liberty with the ingredients. That's what's great about a salad - you can use anything you have in the fridge - ham, avocado, red onion, feta - whatever you like. The dressing is easy and tasty! This is beautiful, fresh, delicious and healthy. Great bariatric eating for summer.
For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • a few drops Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
For the Salad:
  • ½ cup diced tomatoes
  • 1 cup diced rotisserie chicken or turkey
  • ½ cup diced cucumber
  • ¼ cup sliced toasted almonds
  • 3 cups chopped romaine hearts
  • 1 hard cooked egg, sliced
  • ½ cup blueberries or sliced strawberries
  • ½ cup crumbled blue cheese
  1. Whisk olive oil, vinegar, lemon juice, mustard, Worcestershire, garlic powder, salt and pepper until thickened and set aside.
  2. Arrange all ingredients in a big wooden or glass salad bowl for a beautiful presentation - tomatoes, chicken, cucumbers, almonds, romaine, egg, fruit and blue cheese.
  3. Spoon dressing over salad and toss well at table. Divide to plates.

    It would be great for recipes to list the number of servings that it is intended to have and, if possible, the nutritional information.

      Jorene, I understand that we are used to conforming, but if you and I and a third NON wls friend were to eat that salad, NONE of us would eat the same amount. So portion size is dictated by fullness and satiety, NOT by how much I say a portion is. One of the reasons we were overweight was because we cleaned our plates… resign your membership in the clean plate club and use fullness rather than SERVES 4 to judge how much to eat.

    For those of us who still like to log or keep a diary of what we are eating the nutrition information is still important; As we are all striving to keep track of our protein for sure along with any carb/fat information.

    I am just glad that somebody took the time to share new recipes with all of us. I don’t care about the portions or anything else because I am the bariatric patient if somebody else wants to eat all they have to do is put a plate together just like mine. About the calories there are plenty of applications that you can use where you enter what you eat and it calculates the calories and other things. Let’s be grateful for the help we are getting with the delicious recipes!!! I know I am!
